π Ingredients:
Fruit Layer:
3 tbsp butter
Β½ cup brown sugar
3β4 ripe plums, sliced
1 cup fresh or frozen blueberries
Cake Batter:
Β½ cup butter, softened
ΒΎ cup sugar
2 eggs
1 tsp vanilla extract
1 Β½ cups all-purpose flour
1 Β½ tsp baking powder
ΒΌ tsp salt
Β½ cup milk
π° Instructions:
Prepare pan: Preheat oven to 350Β°F (175Β°C). Melt 3 tbsp butter in a 9-inch cake pan or skillet. Sprinkle brown sugar over melted butter. Arrange plum slices in a fan shape and scatter blueberries over top.
Make batter: In a bowl, cream Β½ cup butter and sugar until light. Add eggs one at a time, then vanilla. In another bowl, mix flour, baking powder, and salt. Alternate adding dry ingredients and milk to the wet mixture.
Assemble cake: Pour batter gently over fruit and smooth the top.
Bake: Bake for 40β45 minutes or until golden and a toothpick comes out clean.
Cool & flip: Let cool for 10β15 minutes. Run a knife around the edge, place a plate on top, and flip to release the cake.
Serve warm or at room temp.
