Great summer salad idea Dill Pickle Bacon Ranch Pasta Salad:
Ingredients
- 8 oz. pasta (like rotini or bowtie)
- 1 cup cooked bacon, chopped
- 1 cup dill pickles, chopped
- 1/2 cup red onion, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded cheese (cheddar or your choice)
- 1 packet ranch dressing seasoning mix
- 1 cup mayonnaise
- 2 tbsp pickle juice
- Salt and pepper to taste
- Fresh dill (optional, for garnish)
Instructions
1. Cook the Pasta: Boil the pasta according to package instructions. Drain and rinse under cold water to cool it down.
2. Mix Dressing: In a large bowl, combine the ranch dressing mix, mayonnaise, and pickle juice. Stir until well mixed.
3. Combine Ingredients: Add the cooled pasta, bacon, dill pickles, red onion, cherry tomatoes, and cheese to the dressing mixture. Stir until everything is evenly coated.
4. Season: Taste and add salt, pepper, or more pickle juice if desired.
5. Chill: Cover and refrigerate the salad for at least 1 hour to allow the flavors to meld.
6. Serve: Before serving, stir the salad again and garnish with fresh dill if desired.
