Baked Golden Turmeric Cauliflower & Carrot Nuggets 💪🌿
Ingredients:
1.5 cups Cauliflower Florets, finely chopped or pulsed in food processor
1 cup Shredded Carrots
1 can (15 oz / 425g) White Beans or Chickpeas, rinsed and mashed
1/4 cup Nutritional Yeast (optional, for cheesy flavor)
1 teaspoon Turmeric Powder
1/2 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
Salt and Pepper to taste
1 cup Gluten-Free Breadcrumbs, divided
Olive oil spray (optional)
Directions:
1. Preheat & Prep: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Combine Mixture: In a large bowl, combine the finely chopped cauliflower, shredded carrots, mashed white beans/chickpeas, nutritional yeast (if using), turmeric, garlic powder, onion powder, salt, and pepper. Stir in about 1/2 cup of the breadcrumbs. Mix well until the mixture holds together.
3. Form Nuggets: Take tablespoon-sized amounts of the mixture and shape them into nugget forms.
4. Coat Nuggets: Place the remaining 1/2 cup of breadcrumbs in a shallow dish. Press each nugget into the breadcrumbs, coating all sides lightly. Place the coated nuggets on the prepared baking sheet.
5. Bake: Lightly spray the tops of the nuggets with olive oil spray if desired (helps with browning). Bake for 20-25 minutes, flipping halfway through, until golden brown, crispy, and cooked through.
6. Serve: Serve warm with ketchup, vegan ranch, or your favorite dipping sauce.
