Apple Pie Cheesecake
Ingredients
For the Crust:
1½ cups graham cracker crumbs
¼ cup brown sugar
½ tsp cinnamon
6 tbsp melted butter
For the Cheesecake Filling:
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
¼ cup sour cream
1 tsp vanilla extract
3 large eggs
For the Apple Topping:
3 apples (peeled, diced)
3 tbsp butter
¼ cup brown sugar
1 tsp cinnamon
¼ tsp nutmeg
1 tbsp cornstarch + 2 tbsp water (for slurry)
Caramel Sauce (store-bought or homemade):
Drizzle for garnish

Instructions
1. Make the Crust
Preheat oven to 325°F (163°C).
Mix graham crumbs, sugar, cinnamon, and melted butter.
Press into a 9-inch springform pan and bake for 10 minutes. Let cool.
2. Prepare Cheesecake Filling
Beat cream cheese until smooth. Add sugar, sour cream, and vanilla.
Add eggs one at a time, mixing on low speed.
Pour over cooled crust.
Bake for 50–60 minutes, or until center is just set. Let cool completely and refrigerate for at least 4 hours or overnight.
3. Make Apple Pie Topping
In a skillet, melt butter. Add apples, brown sugar, cinnamon, and nutmeg. Cook until softened.
Add slurry (cornstarch + water) and stir until thickened. Cool slightly before using.
4. Assemble
Spoon apple topping over chilled cheesecake.
Drizzle with caramel sauce before serving.
