Grilled Chicken Pasta with Zucchini Cream
Chargrilled Chicken over Zucchini Cream Penne
Ingredients:
2 medium zucchinis, chopped
2 tablespoons olive oil
3 cloves garlic, minced
1/2 cup unsweetened plain Greek yogurt
1/4 cup grated Parmesan cheese
Salt and pepper to taste
1 teaspoon lemon juice
12 oz (340g) penne or your choice of pasta
2 boneless, skinless chicken breasts
1 teaspoon dried Italian herbs
1/4 teaspoon paprika
Fresh basil leaves for garnish (optional)
Olive oil spray or brush for grilling
Directions:
Bring a large pot of salted water to boil and cook the pasta until al dente. Drain and set aside.
Heat olive oil in a pan over medium heat. Add zucchini and garlic and sauté for 6–7 minutes until tender. Remove from heat and let cool slightly.
In a blender, combine sautéed zucchini mixture, Greek yogurt, Parmesan cheese, lemon juice, salt, and pepper. Blend until smooth and creamy.
Preheat a grill pan or outdoor grill. Season chicken breasts with salt, pepper, Italian herbs, and paprika. Lightly coat with olive oil.
Grill chicken for about 6–7 minutes per side, or until fully cooked and charred. Let rest, then slice into strips.
Toss the pasta with the zucchini cream sauce and divide onto plates. Top with grilled chicken and garnish with fresh basil.
