Ingredients:
For the Chicken:
2 large boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp Italian seasoning
1/2 tsp garlic powder
Salt and black pepper to taste
For the Bruschetta Topping:
2 medium tomatoes, diced
1/4 cup red onion, finely chopped
2 tbsp fresh basil, chopped
1 tbsp balsamic vinegar
1 tbsp olive oil
Salt and pepper to taste
For Serving:
1/4 cup shredded mozzarella or Parmesan cheese (optional)
Balsamic glaze for drizzling
Directions:
Preheat oven to 375°F (190°C).
Rub chicken breasts with olive oil, Italian seasoning, garlic powder, salt, and pepper.
Heat a skillet over medium-high heat and sear the chicken for 3–4 minutes per side until golden brown.
Transfer chicken to a baking dish and bake for 15–18 minutes, or until fully cooked.
While the chicken bakes, prepare the bruschetta topping by combining tomatoes, red onion, basil, balsamic vinegar, olive oil, salt, and pepper in a bowl.
Once the chicken is done, top with bruschetta mixture and sprinkle with cheese if desired.
Drizzle with balsamic glaze and serve warm.
