• 2 tbsp mushroom pesto (or blend sautéed mushrooms + basil pesto)
• 2 tbsp Greek yogurt or cream
• 1 tbsp lemon juice 🍋
• Splash of water to thin if needed

• Fresh parsley or basil
• Extra Parmesan
• Cracked black pepper



🔥 Instructions

1. Roast the Potatoes
• Preheat oven to 400°F (200°C).
• Toss diced potatoes with olive oil, garlic, rosemary, salt, and pepper.
