Chopped Cheese Loaded Burritos
Ingredients:
- 1 lb lean ground beef
- 1 cup diced onion
- 1 cup shredded cheddar cheese
- ½ cup diced tomatoes
- ¼ cup sliced jalapeños (optional)
- 4 large flour tortillas
- ¼ cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon mustard
- Salt and pepper to taste
- Fresh lettuce leaves
Directions:
1. Heat a large skillet over medium heat. Add the ground beef and diced onion, seasoning with salt and pepper. Cook until the beef is browned and the onions are soft, about 7-10 minutes. Drain any excess grease.
2. Stir in the shredded cheddar cheese and diced tomatoes, allowing the cheese to melt and the mixture to combine evenly. Remove from heat.
3. In a small bowl, mix together mayonnaise, ketchup, and mustard to create the sauce.
4. Warm the flour tortillas slightly to make them pliable.
5. To assemble, spread a spoonful of the sauce on each tortilla. Add a layer of fresh lettuce, then spoon the chopped cheese beef mixture on top. Add sliced jalapeños if desired for extra heat.
6. Roll up the tortillas tightly, folding in the sides to seal the filling inside.
7. Serve immediately while warm and enjoy your loaded burritos.
