๐ 8 chicken drumsticks (about 1 kg)
๐ฅ 3 medium potatoes, peeled and cubed
๐ซ 1 red bell pepper, chopped
๐ซ 1 green bell pepper, chopped

1 medium onion, finely chopped
๐ง 3 garlic cloves, minced
๐ฟ 2 tsp dried thyme
๐ถ๏ธ 1 tsp paprika
๐ง Salt & pepper to taste
๐ถ๏ธ ยฝ tsp chili flakes (optional)
๐งช 1 tsp Worcestershire sauce or soy sauce
๐ข๏ธ 3 tbsp olive oil
๐ง 100 ml chicken broth or water
๐ฉโ๐ณ Instructions
Preheat the oven to 200ยฐC (392ยฐF) top/bottom heat.
Marinate the drumsticks: In a large bowl, mix the chicken with olive oil, garlic, thyme, paprika, chili flakes, salt, pepper, and Worcestershire sauce. Let sit for 10โ15 minutes.
Prep the veggies: In a baking dish, combine potatoes, peppers, and onions. Drizzle with 1 tbsp oil and season lightly with salt and pepper.
Combine & bake: Nestle the marinated drumsticks into the veggie mix. Pour the chicken broth around (not over) the chicken.
Roast uncovered for 45โ50 minutes, turning drumsticks once halfway through, until chicken is golden brown and cooked through (75ยฐC internal temp) and potatoes are tender.
Finish & serve: Let rest 5 minutes. Spoon pan juices over before serving.

Swap drumsticks for bone-in chicken thighs or wings.
Add chunks of carrot or zucchini for extra vegetables.
For crispy skin, broil for the last 3โ5 minutes.
