Crispy Chicken Caesar Sandwich
Ingredients:
For the Chicken:
- 2 boneless, skinless chicken breasts
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Vegetable oil for frying
For the Caesar Dressing:
- 1/2 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste
For the Sandwich:
- 4 ciabatta rolls or your choice of bread
- 2 cups romaine lettuce, chopped
- 1/4 cup grated Parmesan cheese
Instructions:
Prepare the Chicken:
1. Slice the chicken breasts in half to make thinner cutlets.
2. Marinate the chicken in buttermilk for at least 30 minutes.
3. In a separate bowl, mix flour, panko, garlic powder, paprika, salt, and pepper.
4. Dredge the chicken in the flour mixture, ensuring it’s fully coated.
5. Heat vegetable oil in a frying pan over medium heat.
6. Fry the chicken until golden brown and cooked through (about 4-5 minutes per side).
7. Drain on paper towels.
Make the Caesar Dressing:
1. In a bowl, combine mayonnaise, Parmesan cheese, lemon juice, Dijon mustard, minced garlic, salt, and pepper.
2. Mix until smooth and well-blended.
Assemble the Sandwich:
1. Toast the ciabatta rolls lightly if desired.
2. Spread Caesar dressing on both halves of the roll.
3. Place a layer of romaine lettuce on the bottom half.
4. Add the crispy chicken cutlet on top of the lettuce.
5. Sprinkle more Parmesan cheese over the chicken.
6. Close the sandwich with the top half of the roll.
