πŸŽƒ Pumpkin Pecan Cobbler πŸŽƒ
Ingredients:
For the Cobbler Batter:
1 cup (125 grams) all-purpose flour
1 Β½ teaspoons baking powder
Β½ teaspoon fine sea salt
2 teaspoons pumpkin pie spice blend
ΒΎ cup (150 grams) granulated sugar
Β½ cup (120 ml) canned pumpkin puree
ΒΌ cup (60 ml) whole milk
ΒΌ cup (57 grams) unsalted butter, melted
2 teaspoons pure vanilla extract
For the Pecan Topping & Sauce Base:
Β½ cup (100 grams) granulated sugar
Β½ cup (110 grams) packed light brown sugar
ΒΌ cup (30 grams) chopped pecans
1 Β½ cups (360 ml) very hot water
2 tablespoons unsalted butter, melted
1 teaspoon additional pumpkin pie spice
Instructions:
Prepare the Oven and Pan: Preheat your oven to 350Β°F (175Β°C). Lightly grease an 8x8 inch or similar 2-quart baking dish with butter or non-stick spray.

Make the Cobbler Batter: In a medium bowl, whisk together the flour, baking powder, salt, pumpkin pie spice, and the ΒΎ cup of granulated sugar. In a separate bowl, combine the pumpkin puree, milk, ΒΌ cup melted butter, and vanilla. Pour the wet ingredients into the dry ingredients and stir until just combined into a thick batter. Spread this batter evenly into the prepared baking dish.

Create the Topping Layer: In a small bowl, mix the remaining Β½ cup granulated sugar, brown sugar, chopped pecans, and the extra teaspoon of pumpkin pie spice. Sprinkle this mixture evenly over the top of the batter in the baking dish, covering it completely.

Form the Sauce: Carefully pour the very hot water over the entire surface of the sugar and pecan topping. Do not stir. Drizzle the final 2 tablespoons of melted butter over the top.

Bake to Perfection: Place the baking dish in the preheated oven and bake for 35-40 minutes. The cobbler is ready when the top is set, firm to the touch, and has a golden-brown appearance. The saucy layer will be bubbling beneath the surface.

Cool and Serve: Remove the cobbler from the oven and let it rest for 10-15 minutes. This allows the sauce to thicken slightly. Serve warm, ideally with a scoop of vanilla ice cream or a dollop of whipped cream.
