A cheesy, layered casserole that satisfies taco cravings without all the carbs. Perfect for family dinners or meal prep!
Ingredients
Meat Layer:
1 lb ground beef (or turkey)
2 tbsp taco seasoning (sugar-free or homemade)
¼ cup water
1 cup sugar-free salsa (mild, medium, or hot)
Base Layer (choose one):
4–5 low-carb tortillas (Mission Carb Balance or homemade almond flour)
OR 3 cups cooked spaghetti squash strands
OR 1 batch keto “fathead” dough, rolled thin
Cheese Layer:
1 ½ cups shredded cheddar cheese
1 cup shredded mozzarella
Toppings:
½ cup diced tomatoes
¼ cup chopped green onions
Optional: sour cream, avocado, jalapeños
Instructions
Cook the Meat
Brown ground beef in a skillet over medium heat, then drain excess grease.
Stir in taco seasoning, water, and salsa. Simmer for 5 minutes.
Assemble the Casserole
Preheat oven to 375°F (190°C).
Grease a baking dish (round or square).
Layer your base (tortillas, spaghetti squash, or fathead dough).
Spread half the meat mixture over it, then sprinkle with half the cheese.
Repeat layers, finishing with cheese on top.
Bake
Bake uncovered for 20–25 minutes, until the cheese is melted and bubbly.
Add Toppings
Sprinkle with diced tomatoes and green onions.
Add sour cream, avocado, or jalapeños if desired.
