Blueberry Breakfast Quesadillas
Ingredients:
- 4 large flour tortillas
- 1 cup fresh blueberries
- 1 cup cream cheese, softened
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 1 cup shredded mozzarella cheese
- 1 tablespoon butter
Directions:
1. In a small bowl, mix the softened cream cheese with honey and vanilla extract until smooth.
2. Spread an even layer of the cream cheese mixture over half of each tortilla.
3. Sprinkle fresh blueberries evenly over the cream cheese layer.
4. Add a generous sprinkle of shredded mozzarella cheese on top of the blueberries.
5. Fold the tortillas in half to create a half-moon shape.
6. Heat a non-stick skillet over medium heat and melt butter.
7. Place each folded quesadilla in the skillet and cook for 2-3 minutes on each side, or until the tortillas are golden brown and the cheese has melted.
8. Remove from the skillet, cut into wedges, and serve warm.

Tips:
