Chipotle Lime Chicken with Cilantro Avocado Pasta
Zesty Chipotle Lime Chicken over Creamy Cilantro Avocado Fettuccine
Ingredients:
1.5 lbs (680g) boneless, skinless chicken breasts
2 tablespoons olive oil, divided
3 tablespoons lime juice, plus zest of 1 lime
2 tablespoons honey
2 chipotle peppers in adobo sauce, minced (plus 1 tablespoon of the sauce)
3 cloves garlic, minced, divided
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
12 oz (340g) fettuccine pasta
2 ripe avocados
1 cup fresh cilantro leaves, plus extra for garnish
1/4 cup Greek yogurt
2 tablespoons olive oil
1 jalapeño, seeds removed and roughly chopped (optional)
2 tablespoons lime juice
1/2 teaspoon salt
1/4 cup pasta water (reserved)
Cherry tomatoes, halved, for garnish
Crumbled cotija or feta cheese, for serving (optional)
Lime wedges, for serving
Directions:
In a bowl, whisk together 1 tablespoon olive oil, lime juice, lime zest, honey, minced chipotle peppers with adobo sauce, 2 cloves minced garlic, cumin, oregano, salt, and pepper.
Place chicken breasts in a zip-top bag or shallow dish and pour marinade over them. Seal and refrigerate for at least 30 minutes, up to 4 hours.
Preheat grill or skillet to medium-high heat. Remove chicken from marinade (discard used marinade) and cook for 6-7 minutes per side, or until internal temperature reaches 165°F (74°C). Let rest for 5 minutes before slicing.
While chicken is cooking, bring a large pot of salted water to boil. Cook fettuccine according to package directions until al dente. Reserve 1/4 cup pasta water before draining.
For the avocado sauce: In a food processor or blender, combine avocados, cilantro, Greek yogurt, remaining 1 clove garlic, jalapeño (if using), 2 tablespoons olive oil, lime juice, and salt. Blend until smooth and creamy.
In a large bowl, toss the hot pasta with the avocado sauce, adding reserved pasta water as needed to reach desired consistency.
Serve pasta topped with sliced chipotle lime chicken, garnished with cherry tomatoes, extra cilantro, crumbled cheese if using, and lime wedges.
