Ingredients:
• 2 cups all-purpose flour
• 1/4 cup granulated sugar
• 1 tbsp baking powder
• 1/4 tsp salt
• 1/2 cup unsalted butter, cold and cut into cubes
• 1/2 cup heavy cream, plus more for brushing
• 1 large egg
• 1 tsp vanilla extract
• 1 cup fresh blueberries (or frozen, but do not thaw)
• 1 tbsp lemon zest (optional)
• 1-2 tbsp coarse sugar, for sprinkling on top
Instructions:
1 Preheat Oven & Prepare Baking Sheet:�Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
2 Mix the Dry Ingredients:�In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
3 Cut in the Butter:�Add the cold, cubed butter to the flour mixture. Using a pastry cutter, fork, or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized pieces of butter.
4 Add the Wet Ingredients:�In a separate small bowl, whisk together the heavy cream, egg, and vanilla extract. Pour this mixture into the flour and butter mixture. Stir gently until just combined. Be careful not to overmix.
5 Fold in the Blueberries:�Gently fold the fresh blueberries (and lemon zest, if using) into the dough. If the dough feels too sticky, add a little more flour until it comes together.
6 Shape & Cut the Scones:�Turn the dough out onto a lightly floured surface and gently knead it a couple of times to bring it together. Pat the dough into a 1-inch thick circle. Using a sharp knife or a bench scraper, cut the dough into 8 wedges.
7 Prepare for Baking:�Transfer the scone wedges to the prepared baking sheet. Brush the tops with a little more heavy cream and sprinkle with coarse sugar for a beautiful golden finish.
8 Bake the Scones:�Bake for 18-22 minutes, or until the scones are golden brown on top and a toothpick inserted into the center comes out clean.
9 Cool & Serve:�Allow the scones to cool for a few minutes before serving. Enjoy them warm with butter or clotted cream!
