Zucchini Garlic Bites π₯π§π§β¨
**Ingredients: (Makes about 12 bites)
- 1 Β½ cups grated zucchini (squeeze out excess moisture)
- Β½ cup breadcrumbs
- Β½ cup grated Parmesan cheese
- 1 egg, beaten
- 2 cloves garlic, minced
- ΒΌ cup fresh parsley, chopped
- Β½ tsp dried basil
- Β½ tsp dried oregano
- Salt & pepper to taste
**Instructions:
1. Preheat oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper.
2. Prepare the zucchini: Squeeze out excess moisture using a clean towel.
3. Mix ingredients: In a bowl, combine zucchini, breadcrumbs, Parmesan, egg, garlic, parsley, basil, oregano, salt, and pepper. Stir until well combined.
4. Form bites: Scoop tablespoon-sized portions and roll into small balls or flatten slightly.
5. Bake for 15β18 minutes until golden brown and firm.
6. Serve warm with marinara sauce or a dipping sauce of your choice.
