Cajun Chicken and Sausage Pasta Skillet

Ingredients:

12 oz (340g) penne pasta

2 tbsp olive oil

1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces

8 oz (225g) smoked sausage, sliced

1 tsp salt

1 tsp black pepper

1 ½ tbsp Cajun seasoning

2 tbsp unsalted butter

3 cloves garlic, minced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

½ tsp smoked paprika

½ tsp onion powder

½ cup cherry tomatoes, halved

¼ cup chopped fresh parsley (for garnish)

½ tsp red pepper flakes (optional, for extra spice)

Directions:

Cook the Pasta:

Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions. Drain and set aside.

Cook the Chicken & Sausage:

Heat olive oil in a large skillet over medium-high heat.

Season the chicken with salt, black pepper, and 1 tbsp Cajun seasoning.

Cook for 4-5 minutes until browned and cooked through. Remove and set aside.

Add the sliced sausage to the same skillet and cook for 3 minutes until browned. Remove and set aside.

Prepare the Sauce:

In the same skillet, melt butter and sauté garlic for 30 seconds.

Add the bell peppers and cook for 3 minutes until slightly softened.

Pour in heavy cream and chicken broth, stirring well.

Add Parmesan cheese, smoked paprika, onion powder, and remaining Cajun seasoning. Stir until the sauce thickens.

Combine Everything:

Return the cooked pasta, chicken, and sausage to the skillet.

Toss everything together until evenly coated.

Stir in cherry tomatoes and red pepper flakes (if using).

Serve & Garnish:

Garnish with fresh parsley and extra Parmesan cheese.

Serve hot and enjoy!
