Spinach and Feta Chicken Rolls

Ingredients:
4 boneless, skinless chicken breasts
1 cup fresh spinach, chopped
1/2 cup feta cheese, crumbled
1/4 cup cream cheese, softened
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
Olive oil for drizzling
Toothpicks or kitchen twine for securing

Directions:
Preheat your oven to 375°F (190°C). In a mixing bowl, combine the chopped spinach, feta cheese, cream cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.

Take each chicken breast and place a generous amount of the spinach and feta mixture in the center. Roll the chicken breast tightly around the filling and secure it with toothpicks or kitchen twine to hold the shape.

Place the rolled chicken breasts in a baking dish and drizzle with olive oil. Season the tops with additional salt and pepper if desired.

Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
