Holiday-Ready Maple Lentil Loaf with a Velvety Mash
Ingredients:
For the Lentil Loaf:
- 1 cup cooked lentils
- 1/2 cup breadcrumbs
- 1/4 cup ground flaxseed mixed with 1/4 cup water (flax egg)
- 1 onion, diced
- 1 carrot, grated
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
- 2 tablespoons soy sauce
- 2 tablespoons ketchup
For the Glaze:
- 2 tablespoons maple syrup
- 2 tablespoons ketchup
- 1 teaspoon Dijon mustard
For the Sweet Potato Mash:
- 3 medium sweet potatoes, peeled and cubed
- 2 tablespoons plant-based butter
- 1/4 cup plant-based milk
- Salt and pepper to taste
Directions:
1. Preheat oven to 375°F (190°C). In a skillet, sauté onion, garlic, and carrot until softened.
2. In a large bowl, mix lentils, breadcrumbs, flax egg, sautéed vegetables, thyme, soy sauce, and ketchup. Press the mixture into a loaf pan.
3. In a small bowl, whisk together maple syrup, ketchup, and Dijon mustard. Spread glaze over the loaf.
4. Bake for 40 minutes, letting it rest for 10 minutes before slicing.
5. Meanwhile, boil sweet potatoes until tender. Mash with plant-based butter, milk, salt, and pepper.
6. Serve the lentil loaf with sweet potato mash on the side.
