😋 Mom's Potato Latkes 🥔
Latkes (potato pancakes) are a must-have at Hanukkah, but let’s be real, they’re delicious any time of the year! 💖 This recipe is my mom’s, and it’s honestly the BEST one I’ve ever had. I usually end up making a second batch because they disappear so quickly! 🙌 I’ve tried other recipes, but I always come back to this one. Topped with sour cream or applesauce, it’s simply divine! 😋
🔸Ingredients:
🥔 3 cups shredded potato
🧅 ¼ cup grated onion
🍪 6 saltine crackers (crushed)
🥚 2 large eggs (beaten)
🧂 ½ tsp salt (or more to taste)
🧑🍳 ¼ tsp ground black pepper
🥄 ½ cup vegetable oil (or as needed)
🔸Directions:
In a large bowl, combine shredded potato, grated onion, crushed crackers, beaten eggs, salt, and pepper.
Heat ¼ inch of oil in a heavy skillet over medium-high heat.
Drop spoonfuls of the potato mixture into the hot oil, pressing the mixture against the side of the bowl to remove excess liquid.
Slightly flatten the latkes with the back of a spoon to make an even thickness.
Fry until golden brown and crispy on both sides, then serve warm with sour cream or applesauce. Enjoy! 😍
