**Ingredients:
2 medium beets (peeled, diced), 3 large carrots (peeled, sliced), 2 tbsp olive oil, salt & pepper, 4 cups mixed greens (arugula, spinach), 8 oz burrata cheese, ΒΌ cup toasted walnuts, 2 tbsp balsamic glaze.

Preheat oven to 425Β°F. Toss beets and carrots with olive oil, salt, and pepper. Roast for 25-30 minutes until tender. Arrange mixed greens on a platter, tear burrata over the top, and sprinkle with toasted walnuts. Add the roasted veggies and drizzle with balsamic glaze to serve.
