No-Bake Turtle Mini Cheesecakes
Ingredients:
- 1 cup graham cracker crumbs
- 4 tablespoons unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1/2 cup caramel sauce
- 1/2 cup chopped pecans
- 1/2 cup mini chocolate chips
Directions:
1. In a medium bowl, combine graham cracker crumbs and melted butter. Mix until crumbs are evenly coated.
2. Press the crumb mixture firmly into the bottoms of mini cheesecake cups or a mini muffin tin lined with paper liners. Place in the refrigerator to chill while preparing the filling.
3. In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
4. In a separate bowl, whip the heavy whipping cream until stiff peaks form.
5. Gently fold the whipped cream into the cream cheese mixture until well combined.
6. Spoon the cheesecake filling over the graham cracker crusts in the mini cups.
7. Drizzle caramel sauce over each cheesecake and sprinkle with chopped pecans and mini chocolate chips.
8. Refrigerate for at least 3 hours or until set before serving.
