Homemade Keto Chocolate Toffee Bites (Sugar-Free & Crunchy)
Ingredients
🧈 For the Keto Toffee Base

1 cup unsalted butter

1 cup granulated erythritol or allulose (allulose gives a softer chew; erythritol gives a snappy crunch)

1 tsp vanilla extract

Pinch of salt

🍫 For the Chocolate & Coating

6 oz sugar-free dark chocolate chips (Lily’s or ChocZero work great)

1 tbsp coconut oil or butter

½ cup finely chopped pecans or almonds (for coating or topping)

Instructions
1. Prepare Your Pan

Line a small baking sheet with parchment paper or a silicone mat — this will keep the toffee from sticking. Set aside.

2. Make the Toffee Base

In a heavy-bottomed saucepan, melt the butter over medium heat.

Stir in the sweetener and salt. Keep stirring gently as the mixture bubbles — this part takes patience.

Continue cooking until the color turns a deep golden amber and the mixture thickens (usually around 280°F / soft crack stage on a candy thermometer).

Immediately remove from heat, stir in vanilla, and pour the toffee onto your prepared pan.

Let it spread naturally — don’t touch it!

Allow it to cool completely (about 30 minutes).

3. Melt the Chocolate

In a microwave-safe bowl, melt chocolate chips and coconut oil in 20-second bursts, stirring between each until smooth.

4. Assemble the Bites

Once the toffee is cool, spread the melted chocolate evenly on top.

Sprinkle chopped nuts over the chocolate layer while it’s still warm.

Let everything set at room temperature, or speed it up in the fridge for about 20 minutes.

5. Break or Cut into Pieces

Once firm, break into rustic shards or cut neatly into squares like in your photos.

Store in an airtight container in the fridge (they last up to 2 weeks — if they even make it that long).

💡 Pro Tips for Candy-Shop Quality

Don’t rush the caramel stage: Stir constantly and watch for color — from buttery yellow → golden → deep amber.

Use allulose for a chewy caramel feel, erythritol for classic snap-toffee texture.

Add flaky salt on top for a salted caramel version.

Want to coat fully like your middle photo? Dip cooled toffee cubes in chocolate, roll them in crushed nuts, and chill to harden.
