Pumpkin Bars with Pumpkin Spice Cream Cheese Drizzle
Ingredients:
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons pumpkin pie spice
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup canned pumpkin puree
- 1 teaspoon vanilla extract
For the Pumpkin Spice Cream Cheese Drizzle:
- 4 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 teaspoon pumpkin pie spice
- 2 tablespoons milk
Directions:
1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
3. In a large bowl, beat together granulated sugar, brown sugar, and vegetable oil until well combined.
4. Add eggs one at a time, beating well after each addition. Stir in pumpkin puree and vanilla extract.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Pour batter into prepared pan and spread evenly.
7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
8. While bars are cooling, prepare the drizzle. Beat cream cheese until smooth, then add powdered sugar, pumpkin pie spice, and milk. Mix until smooth and drizzle over cooled pumpkin bars.
