Blueberry Banana Bread recipe that results in a moist and flavorful loaf!

Ingredients:

3 ripe bananas (mashed)

1 cup fresh or frozen blueberries (don’t thaw if frozen)

2 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

1/2 cup unsalted butter, softened

3/4 cup brown sugar (or granulated sugar)

2 large eggs

1 tsp vanilla extract

1/2 cup buttermilk (or regular milk)

1/4 cup sour cream (optional for extra moisture)

Instructions:

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

Prepare dry ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

Cream butter and sugar: In a large bowl, cream together the softened butter and brown sugar until light and fluffy. This should take about 3 minutes.

Add eggs and banana: Beat in the eggs one at a time. Then mix in the mashed bananas and vanilla extract.

Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk (or regular milk), beginning and ending with the dry ingredients. Stir until just combined (don’t overmix).

Fold in blueberries: Gently fold in the blueberries with a spatula to avoid breaking them.

Bake: Pour the batter into the prepared loaf pan. Bake for about 60-70 minutes, or until a toothpick or cake tester inserted into the center comes out clean.

Cool and enjoy: Allow the bread to cool in the pan for about 10-15 minutes, then transfer to a wire rack to cool completely.

Tips:

If you are using frozen blueberries, do not thaw them before adding them to the batter.

For a sweeter touch, sprinkle a little sugar on top of the batter before baking.

The bread can be stored at room temperature for 2-3 days or frozen for up to 2 months.

This recipe yields a tender, moist, and flavorful banana bread with bursts of blueberry in every bite!
