Keto Marble Loaf Cake
Ingredients:
For the batter:
2 cups almond flour
¼ cup coconut flour
1 tbsp baking powder
½ cup unsalted butter (softened)
½ cup erythritol or monk fruit sweetener
4 large eggs (room temperature)
½ cup unsweetened almond milk (or heavy cream for richness)
1 tsp vanilla extract
Pinch of salt
For the chocolate swirl:
2 tbsp unsweetened cocoa powder
2 tbsp unsweetened almond milk
Instructions:
Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
In a large bowl, cream together butter and sweetener until light and fluffy.
Add eggs, one at a time, then mix in vanilla.
Stir in almond flour, coconut flour, baking powder, salt, and almond milk. Mix until smooth.
Divide batter into two bowls. In one bowl, add cocoa powder + almond milk and mix well.
Pour half of the vanilla batter into the loaf pan. Add chocolate batter on top, then swirl with a knife. Top with the rest of the vanilla batter.
Bake for 45–55 minutes, or until a toothpick comes out clean.
Let cool completely before slicing.
