3 Ingredients Pumpkin Cookies
Ingredients:
- 1 cup canned pumpkin
- 2 cups oat flour
- 1/2 cup brown sugar
Directions:
1. Preheat oven to 350°F (175°C).
2. In a large bowl, combine the canned pumpkin, oat flour, and brown sugar. Mix until a dough forms.
3. Using a spoon or cookie scoop, drop tablespoon-sized portions of dough onto a parchment-lined baking sheet.
4. Flatten each cookie slightly with the back of a spoon or your fingers.
5. Bake for 15-18 minutes, or until the edges are firm and the cookies are lightly golden.
6. Remove from oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
