Fideo with Ground Beef and Potatoes
Ingredients:
1 lb ground beef
1 onion, diced
2 cloves garlic, minced
2 potatoes, diced
1 package fideo pasta (about 7 oz)
1 can tomato sauce (8 oz)
4 cups beef broth
1 tsp cumin
1 tsp chili powder
Salt and pepper, to taste
Directions:
In a large skillet, brown the ground beef over medium heat until fully cooked, breaking it up as it cooks.
Add the diced onion and minced garlic to the skillet with the ground beef. Cook, stirring occasionally, until the onion becomes translucent.
Stir in the diced potatoes and cook for 5-7 minutes, or until they begin to soften slightly.
Push the meat and potato mixture to one side of the skillet. Add the fideo pasta to the other side and toast it until it turns golden brown, stirring occasionally.
Once the pasta is toasted, mix everything in the skillet together. Pour in the can of tomato sauce and the beef broth, then add the cumin, chili powder, salt, and pepper.
Bring the mixture to a boil, then reduce the heat to low. Simmer until the potatoes and pasta are tender, and the liquid has reduced to a thick, saucy consistency, about 15-20 minutes.
