Ingredients:
3 large eggs, separated
Β½ cup cottage cheese, blended until smooth
ΒΌ teaspoon cream of tartar
Β½ teaspoon salt
1 tablespoon cornstarch or arrowroot powder (optional, for added structure)
1 teaspoon honey or a pinch of sweetener (optional)
ΒΌ cup fresh or frozen blueberries
Instructions:
1. Preheat your oven to 300Β°F (150Β°C) and prepare a baking sheet with parchment paper.
2. In a clean, dry bowl, use an electric mixer to beat the egg whites and cream of tartar until stiff peaks appear.
3. In another bowl, mix the egg yolks, blended cottage cheese, salt, cornstarch (if using), and honey or sweetener together.
4. Carefully fold the whipped egg whites into the cottage cheese mixture in three parts, taking care not to deflate the batter.
5. Drop spoonfuls of the mixture onto the prepared baking sheet to create 4-6 round cloud-like shapes.
6. Gently press a few blueberries into the top of each round.
7. Bake for 25-30 minutes, or until they turn golden brown and are set.
8. Allow to cool slightly before serving. These are delightful warm or at room temperature!
