Ingredients:
1 1/2 cups whole pecan halves, lightly toasted
1 cup soft caramel candies (or homemade caramel, if preferred)

1 1/4 cups semi-sweet chocolate chips
1/2 cup milk chocolate chips (for extra creaminess)
1 teaspoon coconut oil or vegetable shortening (optional, for smoother chocolate)

Directions:
Prepare the Pecans: Preheat your oven to 300°F (150°C). Spread the pecan halves on a baking sheet and toast for 5-7 minutes, until fragrant. Allow to cool slightly, then group them into small clusters of 3-4 pecans on a parchment-lined baking sheet.
Melt the Caramel: In a small saucepan, combine the caramel candies and heavy cream over low heat. Stir constantly until the caramel is smooth and pourable. Alternatively, microwave in 30-second intervals, stirring between each until fully melted.
Assemble the Clusters: Spoon about 1 teaspoon of the melted caramel over each pecan cluster, ensuring the caramel drapes over the nuts to hold them together. Let the caramel set for 10-15 minutes at room temperature.
Melt the Chocolate: Combine the semi-sweet and milk chocolate chips in a heatproof bowl. Melt using a double boiler or microwave in 20-second intervals, stirring well after each, until smooth. Stir in coconut oil or shortening for a glossy finish, if desired.
Coat the Clusters: Spoon the melted chocolate generously over each caramel-coated pecan cluster, covering the caramel completely. Smooth the chocolate with the back of a spoon, if needed, for an even layer.
Add the Finishing Touch: Before the chocolate sets, sprinkle a pinch of sea salt over each cluster for a touch of elegance and a burst of flavor contrast.
