German Potato Pancakes - Don't LOSE this Recipe πŸ˜‹
Ingredients:
2 lbs (900g) potatoes, peeled and grated
1 small onion, grated
2 large eggs
1/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
Vegetable oil , for frying
For Serving:
Applesauce (traditional sweet pairing)
Sour cream (classic savory option)
Chopped fresh chives , for garnish
Step-by-Step Instructions
Step 1: Prepare the Potatoes
Grate the peeled potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. (This step is crucial for achieving crispy pancakes!)
Reserve the potato starch that settles at the bottom of the liquid and mix it back into the grated potatoes for extra crispiness.
Step 2: Mix the Batter
In a large mixing bowl, combine the grated potatoes, grated onion, eggs, flour, salt, and pepper. Mix until well combined.
Step 3: Fry the Pancakes
Heat about ΒΌ inch of vegetable oil in a large skillet over medium heat. The oil should shimmer but not smoke.
Scoop about ΒΌ cup of the potato mixture into the skillet for each pancake, flattening it slightly with a spatula to form a round shape.
Fry for 3–4 minutes per side , or until golden brown and crispy. Flip carefully to avoid breaking the pancakes.
Step 4: Drain and Serve
Transfer the cooked pancakes to a plate lined with paper towels to drain excess oil.
Serve warm with applesauce, sour cream, or both. Garnish with fresh chives if desired.
