Ingredients (Makes 12 cupcakes)

1 cup all-purpose flour
3/4 cup granulated sugar

1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Wet Ingredients:
2 large eggs (at room temperature)
1/2 cup milk (whole or 2% works well)
1/2 cup vegetable oil
1 teaspoon vanilla extract
Additional:
1/2 cup boiling water
1 cup fresh blackberries (rinsed gently and patted dry)
Instructions
Preheat & Prep:
Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
Dry Mix:
In a large bowl, sift together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
Wet Mix:
In a separate bowl, whisk the eggs, milk, vegetable oil, and vanilla extract until well combined.
Create the Batter:
Gradually stir the wet ingredients into the dry ingredients until just combined. Carefully mix in the boiling water—it will thin the batter, but that ensures extra moist cupcakes.
Fold in Blackberries:
Gently fold in the fresh blackberries, taking care not to overmix to keep the berries intact.
Bake:
Spoon the batter into the prepared liners, filling each about 2/3 full. Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.
Cool:
Allow the cupcakes to cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.

Ingredients
4 oz cream cheese, softened
1/4 cup unsalted butter, softened
2 cups powdered sugar, sifted
1 teaspoon vanilla extract
2–3 tablespoons blackberry puree (blend a few fresh blackberries and strain to remove seeds)
Instructions
Cream the Base:
Beat the cream cheese and butter together in a medium bowl until smooth.

Gradually beat in the powdered sugar until the frosting is light and fluffy.
