Stir-Fry Ramen with Teriyaki Chicken 🥢

Ingredients:

For the Chicken:

2 boneless, skinless chicken breasts, sliced thin

1/4 cup teriyaki sauce (store-bought or homemade)

1 tablespoon olive oil

For the Stir-Fry:

2 packs ramen noodles (discard seasoning)

1 tablespoon olive oil

1 red bell pepper, sliced

1 cup broccoli florets

1 carrot, julienned

3 cloves garlic, minced

1/4 cup teriyaki sauce (extra for stir-fry)

2 green onions, chopped (optional)

Sesame seeds, for garnish (optional)

Directions:

In a bowl, toss sliced chicken with 1/4 cup teriyaki sauce. Let it marinate for 10–15 minutes.

Heat 1 tablespoon olive oil in a skillet or wok over medium heat. Add chicken and cook until fully cooked and browned, about 5–7 minutes. Remove and set aside.

Meanwhile, cook ramen noodles according to package instructions (just the noodles, no seasoning). Drain and set aside.

In the same skillet, add another tablespoon of olive oil. Add bell pepper, broccoli, and carrot. Stir-fry for 4–5 minutes until slightly tender.

Add minced garlic and cook 30 seconds until fragrant.

Add cooked noodles and pour in the extra 1/4 cup teriyaki sauce. Toss everything to coat evenly.

Return chicken to the skillet and toss again. Cook for another 2 minutes to heat through.

Garnish with green onions and sesame seeds if desired. Serve hot!
