Ingredients:
2 boneless, skinless chicken breasts, cut into strips
12 oz fettuccine or penne pasta
2 tablespoons olive oil
1 tablespoon Cajun seasoning
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
2 cups fresh spinach, chopped
Salt and pepper to taste
1 tablespoon butter
Fresh parsley, chopped (for garnish)
Directions:
Begin by heating the olive oil in a large skillet over medium-high heat. Season the chicken strips generously with Cajun seasoning, salt, and pepper. Add the chicken to the skillet and cook for about 6 to 7 minutes on each side, until golden brown and fully cooked. Once done, remove the chicken from the skillet and set it aside to rest.

Now, add the drained pasta to the skillet, tossing it gently to ensure the noodles are evenly coated in the creamy sauce. Stir in the fresh spinach and let it cook for 1 to 2 minutes until the spinach has wilted and softened.
Finally, return the cooked chicken to the skillet, tossing everything together until combined. Serve immediately, garnished with fresh parsley.
