2 boneless, skinless chicken breasts, cut into bite-sized pieces
ΒΌ cup full-fat coconut milk
3 cloves garlic, minced π§

2 medium Yukon Gold potatoes, cut into 1-inch cubes
2 tbsp olive oil

π―πΆοΈππΏ Creamy Twist: Creamy Hot Honey Mushroom Basil Sauce Drizzle:
1 tbsp olive oil
6 oz cremini mushrooms, sliced
2 cloves garlic, minced
ΒΌ cup fresh basil leaves πΏ
ΒΌ cup hot honey π―πΆοΈ (store-bought or mix honey with your favorite hot sauce)
Β½ cup heavy cream
Salt & freshly cracked black pepper to taste
Instructions
Prepare Potatoes: Preheat oven to 200Β°C (400Β°F). In a large bowl, toss potato cubes with 2 tbsp olive oil, chopped fresh sage, 2 cloves minced garlic, salt, and pepper. Spread in a single layer on a baking sheet and roast for 25-30 minutes, or until golden brown and crispy, flipping halfway through.
Marinate & Stir-Fry Chicken: While potatoes roast, in a bowl, combine ΒΌ cup coconut milk, 3 cloves minced garlic, oregano (if using), salt, and pepper. Add chicken bites and marinate for at least 15 minutes.
Heat 1 tbsp olive oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry for 5-7 minutes until cooked through and lightly browned.
If using stir-fry veggies: Add them now and stir-fry for another 3-5 minutes until tender-crisp. Remove chicken and veggies from skillet and set aside.
Prepare Creamy Hot Honey Mushroom Basil Sauce: In the same skillet, heat 1 tbsp olive oil over medium heat. Add sliced mushrooms and 2 cloves minced garlic. Cook until mushrooms are softened and lightly browned, about 5-7 minutes.
Transfer the cooked mushrooms and garlic to a food processor. Add fresh basil leaves and hot honey. Pulse until roughly combined.
Add heavy cream to the food processor and blend until creamy and smooth. Season with salt and pepper to taste. Return sauce to the skillet and gently warm over low heat.
Assemble & Serve: Divide the crispy sage-infused roasted potatoes among plates or bowls. Top with the garlic-coconut chicken stir-fry (and veggies, if used). Drizzle generously with the creamy hot honey mushroom basil sauce. Serve immediately and enjoy this unique and flavorful dish!
