Sloppy Joe Tater Tot Casserole
Ultimate comfort food mashup with tangy beef, melted cheese, and crispy tater tots all in one pan.
Ingredients
1 lb ground beef (85% lean)
1 medium onion, chopped
1 green bell pepper, diced (optional)
2 cloves garlic, minced
1 can (15 oz) sloppy joe sauce (like Manwich)
2 cups shredded cheddar cheese
1 bag (32 oz) frozen tater tots
1 tbsp olive oil or butter
Salt and pepper, to taste
Fresh parsley, chopped (for garnish, optional)
Instructions
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
In a skillet over medium heat, add olive oil and cook the ground beef with onion (and bell pepper if using) until the beef is browned and onions are soft, about 6–7 minutes. Drain excess fat.
Stir in garlic and cook for 1 minute. Add sloppy joe sauce, reduce heat, and let simmer for 3–4 minutes. Season with salt and pepper.
Spread the beef mixture evenly in the prepared baking dish. Sprinkle 1 cup of cheddar cheese on top. Arrange tater tots in a single layer over the cheese.
Bake for 25–30 minutes, until the tater tots are crispy and golden.
Remove from oven, sprinkle the remaining 1 cup of cheddar cheese over the top, and return to oven for 5 minutes until the cheese melts.
Garnish with parsley if desired. Serve hot.
