Country Chicken and Potato Bake
Ingredients:
- 4 boneless, skinless chicken breasts
- 4 large potatoes, peeled and thinly sliced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 cup chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese
Instructions:
1. Preheat your oven to 375°F.
2. In a large baking dish, layer the sliced potatoes on the bottom.
3. Place the chicken breasts on top of the potatoes.
4. In a small bowl, mix together the onion, garlic, chicken broth, thyme, rosemary, salt, and pepper.
5. Pour the mixture over the chicken and potatoes.
6. Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
7. Remove the foil, sprinkle the shredded cheddar cheese on top, and bake for an additional 15 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
