Blueberry Butter
Ingredients:
4 cups fresh or frozen blueberries
1/2 cup honey or maple syrup (adjust to taste)
1 tbsp lemon juice
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg (optional)
Pinch of salt
Directions:
Add blueberries to a saucepan over medium heat. Cook for 5–7 minutes, stirring frequently, until berries begin to burst and release juice.
Use an immersion blender (or transfer to a blender) to purée until smooth. Return mixture to the pot if using a blender.
Stir in honey (or maple syrup), lemon juice, cinnamon, nutmeg, and a pinch of salt.
Simmer over low heat, uncovered, stirring occasionally, for 30–40 minutes, or until thickened to a smooth, spreadable consistency.
Let cool, then transfer to a jar or airtight container. Store in the refrigerator for up to 2 weeks.

Tips:
For extra smooth butter, strain through a fine mesh sieve before final simmer.
