Old-Fashioned Potato & Bacon Soup
Ingredients:
- 6 slices bacon, chopped
- 1 large onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 5-6 medium potatoes, peeled and diced
- 1 cup heavy cream
Directions:
1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
2. Add the diced onion and minced garlic to the pot, cooking until the onion is translucent.
3. Stir in the diced potatoes and chicken broth, and bring the mixture to a boil.
4. Reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
5. Blend the mixture until smooth if desired, then stir in the heavy cream.
6. Season with salt and pepper to taste, and add the crispy bacon back into the soup before serving.
