Savory Gluten-Free Chickpea Crackers with Fresh Herbs πΏπ
Ingredients:
1 cup / 120g chickpea flour (besan)
1/4 cup / 30g tapioca starch or arrowroot powder
2 tbsp / 10g nutritional yeast (optional, for cheesy flavor)
1 tbsp fresh rosemary, finely chopped
1 tbsp fresh thyme leaves
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp black pepper
1/4 cup / 60ml olive oil
3-5 tbsp / 45-75ml cold water
Directions:
1. Preheat oven to 350Β°F (175Β°C). Line a large baking sheet with parchment paper.
2. In a medium bowl, whisk together chickpea flour, tapioca starch (or arrowroot), nutritional yeast (if using), chopped rosemary, thyme leaves, salt, garlic powder, and black pepper.
3. Add the olive oil and mix with a fork until the mixture resembles coarse meal.
4. Gradually add cold water, 1 tablespoon at a time, mixing until a firm dough forms. The dough should be pliable but not sticky.
5. Place the dough between two sheets of parchment paper. Roll it out very thinly, about 1/16 to 1/8 inch (1.5-3mm) thick.
6. Remove the top sheet of parchment paper. Score the dough into desired cracker shapes using a knife or pizza cutter. Prick each cracker with a fork.
7. Carefully transfer the parchment paper with the scored dough onto the baking sheet.
8. Bake for 15-20 minutes, or until the crackers are golden brown around the edges and crisp. Watch carefully, as chickpea flour can brown quickly.
9. Let the crackers cool completely on the baking sheet. They will continue to crisp as they cool.
10. Break apart along the score lines and store in an airtight container.
