🧆 Creamy Swedish Meatballs with Mashed Potatoes & Broccoli 🥦

🛒 Ingredients:
For the Meatballs:
500 g ground beef or mixed beef/pork
1 egg 🥚
1/2 onion, finely chopped
2 tbsp breadcrumbs
1 tbsp parsley, chopped 🌿
1 tsp salt & 1/2 tsp pepper
Butter or oil for frying
For the Cream Sauce:
1 tbsp butter
1 tbsp flour
300 ml beef broth
100 ml heavy cream
1 tsp soy sauce
Salt, pepper to taste
Sides:
500 g potatoes, peeled & cooked
30 ml milk + 1 tbsp butter (for mashing)
250 g broccoli florets
👩🍳 Instructions:
Mix all meatball ingredients and shape into balls. Fry in a pan until golden brown and cooked through. Remove and set aside. In the same pan, melt butter, whisk in flour, then slowly add broth. Stir in cream and soy sauce, simmer until thickened. Add meatballs back to sauce. Meanwhile, mash the cooked potatoes with butter and milk. Steam broccoli until tender. Serve meatballs over mash with sauce and broccoli on the side. Enjoy!
