Garlic Butter Chicken bites with Zesty Lemon Parmesan Linguine
Ingredients:
For the Chicken:
4 boneless, skinless chicken breasts
2 tbsp olive oil
4 tbsp butter, divided
4 cloves garlic, minced
1 tsp Italian seasoning
1/2 tsp paprika
1/4 tsp red pepper flakes (optional, for heat)
Salt and pepper to taste
2 tbsp fresh parsley, chopped, for garnish
For the Zesty Lemon Parmesan Linguine:
1 lb linguine pasta
4 tbsp butter
4 cloves garlic, minced
1/2 cup grated Parmesan cheese, plus more for serving
1/4 cup lemon juice, freshly squeezed
2 tbsp lemon zest
1/4 cup reserved pasta water
Salt and pepper to taste
2 tbsp fresh basil, chopped, for garnish
Directions:
Cook the linguine according to package directions until al dente. Reserve about 1/4 cup of the pasta water before draining.
Prepare the Chicken:
Season the chicken breasts with salt, pepper, Italian seasoning, and paprika.
Heat olive oil and 2 tbsp butter in a large skillet over medium-high heat.
Add the chicken breasts to the skillet and cook for about 6-8 minutes per side, or until fully cooked and golden brown. Remove chicken from skillet and set aside.
Make the Garlic Butter Sauce:
In the same skillet, melt the remaining 2 tbsp butter over medium heat.
Add the minced garlic and red pepper flakes (if using) and cook for about 1 minute, until fragrant. Be careful not to burn the garlic.
Return the cooked chicken breasts to the skillet and spoon the garlic butter sauce over them.
Prepare the Linguine:
While the chicken is cooking, melt the butter in a large pan over medium heat.
Add the minced garlic and cook for about 1 minute, until fragrant.
Add the drained linguine to the pan. Pour in the lemon juice and lemon zest. Toss to coat.
Stir in the Parmesan cheese and reserved pasta water. Toss until the sauce is creamy and coats the pasta evenly. Season with salt and pepper to taste.
Combine and Serve:
Place the zesty lemon Parmesan linguine on plates.
Top with the garlic butter chicken breasts.
Garnish with fresh parsley and basil.
Serve immediately with extra Parmesan cheese on the side.
