Fizzy Kool-Aid Lollipops
Ingredients:
2 cups granulated sugar
2/3 cup light corn syrup
2/3 cup water
1/2 teaspoon citric acid (for the fizzy effect)
1 packet Kool-Aid (any flavor of your choice)
1/4 teaspoon baking soda
Lollipop sticks
Lollipop molds
Candy thermometer
Cooking spray or oil (for greasing molds)
Directions:
Lightly grease your lollipop molds with cooking spray and insert lollipop sticks.
In a medium saucepan, combine sugar, corn syrup, and water. Stir to combine.
Heat over medium-high heat without stirring until the temperature reaches 300°F (hard crack stage) on a candy thermometer.
Remove from heat and quickly stir in the Kool-Aid, citric acid, and baking soda. The mixture will bubble, this creates the fizzy effect!
Carefully pour the hot mixture into your prepared molds. Work quickly as it hardens fast.
Let lollipops cool completely (about 30 minutes) before removing from the molds.
Store in an airtight container to keep them fresh and fizzy!
