Garlic Herb Roasted Veggies
Ingredients
1 cup broccoli florets 🥦
1 cup carrots (sliced) 🥕
1 bell pepper (chopped) 🌶️
1 zucchini (sliced) 🥒
3 cloves garlic (minced) 🧄
2 tbsp olive oil 🫒
1 tsp dried herbs (thyme, rosemary, or Italian mix) 🌿
Salt & pepper to taste 🧂
Steps
1. Preheat oven to 425°F (220°C).
2. Toss veggies with olive oil, garlic, herbs, salt & pepper.
3. Spread on a baking sheet in a single layer.
4. Roast for 20–25 minutes until golden and tender, tossing halfway through.
