VELVEETA CAJUN CHICKEN PENNE SKILLET
Ingredients:
2 boneless, skinless chicken breasts, diced
12 oz penne pasta
2 tbsp olive oil
1 tbsp Cajun seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
4 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
1 1/2 cups cubed Velveeta cheese
1/2 cup shredded mozzarella
1/2 cup grated Parmesan cheese
Fresh parsley, chopped (for garnish)
Directions:
1. Bring a pot of salted water to a boil and cook penne until al dente. Drain and set aside.
2. Heat olive oil in a large skillet over medium-high heat. Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
Sauté until browned and cooked through, about 6–7 minutes. Remove and set aside.
3. Make the Sauce:
In the same skillet, add garlic and cook for 1 minute. Pour in chicken broth and heavy cream, then stir in the Velveeta. Cook until melted and smooth.
Add mozzarella and Parmesan, stirring until fully combined and creamy.
4. Return chicken and pasta to the skillet. Toss to coat in the cheesy Cajun sauce. Let simmer for 2–3 minutes until everything is bubbling and well blended.
5. Sprinkle with parsley and serve hot—extra melty, cheesy, and packed with Cajun heat!
