ingredients:
1/2 cup (80g) small sago pearls (tapioca pearls)
4 cups (950ml) water, for cooking sago
2 ripe mangoes, peeled and pureed (about 2 cups or 470g puree)
1 cup (240ml) plant-based milk (like coconut milk or evaporated oat milk)
1/4 cup (60ml) dairy-free condensed milk or maple syrup (adjust to taste)
Cubed fresh mango for serving
directions:
Bring the 4 cups of water to a rolling boil in a medium saucepan.
Add the sago pearls and stir immediately to prevent sticking. Cook according to package directions, stirring occasionally, until the pearls are translucent with just a tiny white dot in the center (usually 10-15 minutes).
Remove from heat, cover, and let stand for 10-15 minutes until the white dots disappear and the pearls are completely translucent.
Drain the sago pearls in a fine-mesh sieve and rinse under cold water to remove excess starch and cool them down.
In a large bowl or pitcher, combine the mango puree, plant-based milk, and dairy-free condensed milk or maple syrup. Stir until smooth.
Add the drained sago pearls to the mango mixture and stir to combine.
Add some cubed fresh mango to the mixture.
Chill the Mango Sago in the refrigerator for at least 1 hour before serving.
Serve in individual bowls or glasses, topped with extra fresh mango cubes if desired.
