Strawberry Cake Donuts
Ingredients:
For the Donuts:
1 ¼ cups all-purpose flour
½ cup granulated sugar
1 tsp baking powder
¼ tsp baking soda
¼ tsp salt
½ cup finely diced fresh strawberries
½ cup buttermilk (or regular milk + 1 tsp vinegar)
1 large egg
2 tbsp unsalted butter (melted)
1 tsp vanilla extract
For the Strawberry Glaze:
1 cup powdered sugar
2–3 tbsp pureed strawberries (about 3–4 strawberries blended)
½ tsp vanilla extract
Optional: pinch of salt
Instructions:
1. Preheat Oven & Prepare Pan:
Preheat oven to 350°F (175°C).
Lightly grease a donut pan with non-stick spray.
2. Make the Donut Batter:
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk the buttermilk, egg, melted butter, and vanilla extract until smooth.
Add the wet ingredients to the dry ingredients and stir until just combined.
Gently fold in the diced strawberries.
3. Fill and Bake:
Spoon the batter into a piping bag or zip-top bag, snip off the corner, and pipe into the donut wells (fill each about ¾ full).
Bake for 10–12 minutes, or until a toothpick inserted into the center comes out clean.
Cool donuts in the pan for 5 minutes, then transfer to a wire rack to cool completely.
4. Make the Strawberry Glaze:
In a small bowl, whisk together the powdered sugar, pureed strawberries, and vanilla extract until smooth.
If glaze is too thick, add a little more strawberry puree; if too thin, add more powdered sugar.
5. Glaze the Donuts:
Dip the tops of the cooled donuts into the glaze.
Place on a wire rack set over parchment paper to catch drips.
Let set for 10–15 minutes before serving.
Tips for Perfect Strawberry Donuts:
Don’t overmix the batter — stir until just combined for light, fluffy donuts.
If you want even more strawberry flavor, you can stir a few teaspoons of strawberry jam into the glaze!
These are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
