Lemon Garlic Salmon with Roasted Asparagus in Foil Packets
Ingredients:
4 (6-ounce) salmon fillets (preferably skin-on)
1 pound asparagus spears, trimmed
2 tablespoons olive oil (or avocado oil)
1 lemon, sliced into rounds
3 cloves garlic, minced
1 teaspoon sea salt or kosher salt
½ teaspoon freshly ground black pepper
Optional Flavor Boosters:
Fresh dill
Chopped parsley
Paprika
Directions:
Preheat oven to 400°F (200°C) and line a large baking sheet with foil.
Rinse and pat dry the salmon fillets. Trim woody ends off the asparagus.
On a large piece of foil, place a handful of asparagus spears in the center, then place a salmon fillet on top.
Drizzle with olive oil and squeeze fresh lemon juice over the fillet and asparagus.
Sprinkle minced garlic, salt, pepper, and desired herbs over the top.
Add 1–2 lemon slices on each salmon portion.
Fold the foil over the ingredients and crimp the edges tightly to form sealed packets.
Repeat with remaining portions, then place the packets on the baking sheet.
Bake for 20–25 minutes, depending on the thickness of the salmon.
Open the foil and broil for 2–3 minutes for a lightly crisp finish, if desired.
Check that the salmon flakes easily with a fork or reaches an internal temperature of 145°F (63°C).
