Grilled Turkey with Creamy Spinach Alfredo
Herb-Grilled Turkey Breast with Garlic Spinach Alfredo Pasta
Ingredients:
2 boneless, skinless turkey breasts
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon dried Italian herbs
Salt and pepper to taste
8 oz fettuccine or penne pasta
1 tablespoon olive oil (for sauce)
3 cloves garlic, minced
3 cups fresh spinach, chopped
1 ½ cups unsweetened plain almond milk or low-fat milk
½ cup grated Parmesan cheese
1 tablespoon cornstarch mixed with 2 tablespoons water
Fresh parsley for garnish
Directions:
Preheat grill or grill pan over medium-high heat.
Rub the turkey breasts with olive oil, garlic powder, dried herbs, salt, and pepper.
Grill the turkey for 6–8 minutes on each side or until fully cooked. Let rest before slicing.
Meanwhile, cook pasta according to package directions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute.
Add spinach and sauté until wilted, about 2 minutes.
Pour in milk and bring to a simmer. Stir in Parmesan cheese and the cornstarch slurry.
Stir continuously until sauce thickens, about 3–5 minutes.
Add the cooked pasta to the skillet and toss to coat evenly with the sauce.
Slice grilled turkey and place over the creamy spinach pasta. Garnish with fresh parsley.
