Easy & Delicious Mini Chickpea Power Bites 💪🥣
ingredients:
1 can (400g) chickpeas rinsed and drained
1/4 cup (30g) gluten-free flour chickpea flour or oat flour
2 tablespoons (15g) nutritional yeast optional for cheesy flavor
1/2 teaspoon ground cumin
1/4 teaspoon ground turmeric
Pinch of cayenne pepper optional
1 clove garlic minced
1 tablespoon (15ml) olive oil
2 tablespoons (30ml) water or vegetable broth
Salt and black pepper to taste
Optional additions: chopped herbs, grated vegetables
directions:
1 Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease.
2 In a food processor, combine the rinsed and drained chickpeas, gluten-free flour, nutritional yeast (if using), cumin, turmeric, cayenne (if using), minced garlic, olive oil, water or vegetable broth, salt, and pepper.
3 Pulse until the mixture is well combined but still has some texture, not a completely smooth paste. You can leave some whole or partially mashed chickpeas. If adding optional chopped herbs or vegetables, stir them in now.
4 Scoop small amounts of the mixture (about 1 tablespoon per bite) and roll them into small balls or shape into mini patties.
5 Place the mini bites on the prepared baking sheet.
6 Bake for 20-25 minutes, flipping halfway through, until golden brown and slightly firm.
7 Serve warm or at room temperature. Store leftovers in the refrigerator.
